"Desi ghee" is one of those phrases everyone uses and few define. It carries a promise — homemade, pure, the way it used to be. But not everything labelled desi ghee lives up to it. Here's what desi ghee really means, what makes it good for you, and how to tell the genuine article.

What does "desi ghee" actually mean?

Literally, desi means "of the land" — local, traditional, indigenous. So desi ghee is traditional Indian ghee, as distinct from mass-produced, machine-made or vegetable "ghee" (vanaspati). At its best, desi ghee means three things together:

  • Made from cultured curd the traditional bilona way — not cream-separated by machine.
  • From A2 milk of desi cows or buffaloes — see A2 vs A1.
  • Pure and unadulterated — no vanaspati, no fillers.

Hit all three and you have real desi ghee. Miss them and "desi" is just a word on the label.
