What each test tells you
- Milk fat: ghee should be almost pure butterfat. 99.76% means almost nothing else is in the jar.
- Moisture: low moisture is why good ghee keeps for months. Ours is 0.24%, under half the legal limit.
- Baudouin test: the standard check for vanaspati (dalda) and sesame-oil adulteration, the most common ghee fraud — see dalda vs ghee.
- A2 genotype: confirms the milk comes from animals carrying only the A2 beta-casein gene — what A2 ghee means.
- Trans fat: real ghee has almost none; high trans fat points to hydrogenated oil (WHO on trans fat).
