Gir vs Sahiwal vs Rathi vs Badri Cow Ghee: Which Desi Breed Is Best?

Gir, Sahiwal, Rathi and Badri are all indigenous Indian cow breeds that give A2 milk, so their ghee is A2. No breed has been shown to make healthier ghee: Gir ghee is the most famous and aromatic, Sahiwal is the most productive dairy breed so its ghee is often better value, Rathi suits the desert, and Badri is a small Himalayan hill cow whose ghee is rare and costly.

Quick take

  • All four are desi A2 breeds — the A2 status is the same.
  • Gir: famous, aromatic, premium. Sahiwal: highest-yielding desi breed, better value.
  • Rathi: hardy Thar breed. Badri: small Uttarakhand hill cow, very scarce ghee.
  • Method, freshness and a lab report matter more than the breed name.

Yields and prices vary widely by farm; this table compares the breeds relative to each other. Breed profiles are maintained by India’s NDDB.

Gir cow ghee

The Gir, from the Gir forests of Saurashtra, is India’s best-known desi breed, recognisable by its domed forehead, long curled ears and curved horns. Gir ghee is prized for its golden colour and strong aroma, and is the most marketed “A2 ghee” — which also makes it the most faked. Full guide: Gir cow ghee.

Sahiwal cow ghee

Sahiwal is widely regarded as the most productive indigenous dairy breed, which is why it is common on organised desi-cow farms. More milk per cow usually means better value per litre, with a rich, mild ghee that is easy to cook with.

Rathi cow ghee

Rathi comes from the Bikaner region of the Thar desert and is valued for producing well on sparse desert grazing. Its ghee is golden and granular, and is mostly sold regionally in Rajasthan.

Badri cow ghee vs Gir cow ghee

The Badri is a small cow of the Uttarakhand hills that grazes on mountain pastures. It gives very little milk, so Badri ghee is scarce and among the most expensive desi ghees. Gir ghee is far more widely available and more aromatic; Badri ghee is lighter, with herbal notes many buyers value. Both are A2. If you are paying a large premium for Badri, ask for proof of source — scarcity invites mislabelling.

Yak ghee vs cow ghee

Yak ghee comes from high-Himalayan regions such as Ladakh, Sikkim and Tibet, where it is used in butter tea and lamps. It is rich and deep yellow, and rarely sold in the plains. Cow ghee is lighter and far easier to buy. For every kind of ghee side by side, see types of ghee.

Which desi breed ghee should you buy?

  • Best aroma and tradition: Gir — if you can verify the farm.
  • Best everyday value: Sahiwal.
  • Rare speciality: Badri, from a seller who can prove the source.
  • Richer and creamier than any cow ghee: A2 buffalo ghee (Gir vs buffalo ghee).

Whichever breed you choose, the checks are the same: bilona method, batch lab report and glass packing — see best A2 cow ghee in India.

Frequently asked questions

Which is better, Gir or Sahiwal cow ghee?

Both are A2 desi ghees. Gir ghee is more aromatic and famous; Sahiwal is the more productive dairy breed, so its ghee is often better value. Neither has been shown to be healthier.

Is Badri cow ghee better than Gir cow ghee?

Not necessarily. Badri ghee is rarer and costlier because Badri hill cows give little milk, and it has a lighter, herbal character. Gir ghee is more aromatic and easier to find. Both are A2.

Is Rathi cow ghee A2?

Yes. Rathi is an indigenous Indian breed from Rajasthan, and indigenous breeds generally produce A2 milk.

What is the difference between yak ghee and cow ghee?

Yak ghee is made from the milk of Himalayan yaks, is rich and deep yellow, and is rarely sold outside mountain regions. Cow ghee is lighter and widely available.
