Panjiri Recipe: Nutritious Ghee & Dry-Fruit Energy Mix

Panjiri is made by slow-roasting whole-wheat flour in pure ghee until golden, then mixing in ghee-fried edible gum, nuts, seeds and powdered sugar or jaggery. It is a traditional postpartum and winter energy food, eaten by the spoonful. It takes about 45 minutes.

Ingredients (~12 servings)

  • 2 cups whole-wheat flour (atta)
  • 3/4 cup buffalo ghee
  • 1/3 cup edible gum (gond)
  • 3/4 cup powdered jaggery or boora
  • Nuts, melon seeds, makhana, cardamom

Method

  1. Fry gond in ghee until it puffs; cool and crush. Roast makhana; crush.
  2. Roast atta in ghee 15–18 min until golden.
  3. Add nuts and seeds; roast 2–3 min. Cool until warm.
  4. Mix in gond, makhana, cardamom and jaggery.
  5. Cool fully and store airtight.
