Binding tip: roll while the mixture is warm, and if it won't hold, add a spoon or two of warm melted pure ghee — ghee is the binder that makes atta ladoos hold their shape.

  • Whole-wheat flour roasted in pure ghee, bound with jaggery and nuts.
  • Quick, wholesome, and a favourite for kids and winter.

Atta ladoo (atte ke laddu) is one of the easiest, most wholesome Indian sweets — just flour, ghee and jaggery, done right.

Ingredients (makes ~14)

  • 2 cups whole-wheat flour (atta)
  • 3/4 cup buffalo ghee
  • 3/4 cup powdered jaggery or boora
  • Chopped nuts, seeds, 1 tsp cardamom

Method

  1. Roast the atta in ghee on low-medium 15–18 min until golden and nutty.
  2. Add nuts and seeds; roast 2 min. Cool until warm.
  3. Mix in jaggery and cardamom.
  4. Roll into ladoos with ghee-greased palms; add warm ghee if dry.
  5. Cool and store airtight.

Tips

  • Roast patiently — golden colour and nutty smell mean it's done.
  • Let it cool to warm before adding jaggery so it doesn't melt to liquid.
  • Use pure ghee — it's the flavour and the binder.

Frequently asked questions

How do you make atta ladoo?

Roast whole-wheat flour in pure ghee on low-medium heat for about 15 to 18 minutes until golden and nutty. Add nuts and seeds, cool until warm, mix in powdered jaggery and cardamom, and roll into ladoos while warm, adding a little warm ghee if the mixture is dry.

Why do my atta ladoos not bind?

Usually the mixture cooled too much or needs more ghee. Roll while it is warm, and add a spoon or two of warm melted ghee to help it hold. Powdered jaggery or boora also binds better than coarse sugar.

Which ghee is best for atta ladoo?

A pure ghee is best because it both roasts the flour and binds the ladoos, and it defines the flavour. Buffalo bilona ghee works well; ensure it is genuinely pure.
